Sweet potato fries are probably one of my favorite foods. They’re packed full of Vitamins A & C- which are pretty powerful antioxidants. They’re good for people with stomach problems, help keep blood pressure low, etc. The number one reason, is obviously because they’re delicious.
What you need:
Depending on how many people are eating, 2 to 4 sweet potatoes. Try to choose evenly shaped ones, because you’ll want to cut them into even french fry shapes. If once cut up, they’re all different sizes they won’t cook evenly and some may burn. Boo.
You also need parchment paper. You can try using aluminum foil or wax paper but the fries are still going to stick to the paper and who wants tin foil flavored fries?
2 egg whites
1 Tbsp veg oil
1 tsp Cumin
1 tsp paprika
pinch of S&P each
Whisk your egg whites in a bowl until they’re frothy. Then add you oil & spices, continuing to whisk so it’s mixed well. After cutting up your fries into about 1 inch strips, add to bowl and toss to coat with the mixture.
You want to cook your fries over 400 degrees. If you cook any lower, they’re going to be mushy, or not cook well/burn. Place your fries evenly on a baking sheet lined with parchment paper, making sure none of them touch. You may need to use two pans or do two rounds depending on how many you’re making. Pop those babies in the oven for about 25 minutes or until they’re crispy, flipping them over halfway.
Again, depends how much you want to make but I usually just eyeball this.
1/2 cup of mayo
1 tsp of lime juice
1 tsp of curry powder
Mix together and BAM. You’re done. This is seriously so good, and after you make them a couple times it’s easy to remember and takes less time.
